Vegan Pancakes with Caramelized Apples

Ingredients

  • 1 1/2 cups flour
  • 1 1/2 cups dairy-free milk
  • 1 Tbls baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 2 Tbls maple syrup
  • 2 Tbls apple cider vinegar
  • 1/2 cup mini chocolate chips

Apple topping

  • 1/2 Granny Smith apple, chopped
  • 1/2 tsp cinnamon
  • 1/4 allspice
  • 2 Tbsp maple syrup
  • 1/4 water
  • 1 Tbsp vegan butter

Preparation

  1. Combine dairy-free milk and apple cider vinegar, set aside.

  2. In another bowl combine flour, baking powder, baking soda, salt and chocolate chips.

  3. Whisk together, add milk and cider mixture, combine.

  4. Add vanilla and syrup, combine.

  5. Allow to rest for a few minutes to maximize the fluffiness of your pancakes.

  6. DO NOT STIR, scoop desired amount into heated, buttered (vegan) pan.

  7. Once bubbly and no longer super wet in appearance flip.

Caramelizing apples

  1. Combine all ingredients, simmer to a nice thickened consistency.

  2. Pour over pancake stack straight out of the pan.
