Quinoa and Wheat Pancakes with Fresh Berries
Ingredients
- 1 1/2 cups all pastry wheat flour
- 1 cup cooked quinoa
- 3 tablespoons malt powder (or sugar)
- 2 tablespoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/2 cups non-dairy milk
- 2 tablespoons avocado oil (or coconut)
- 2 tablespoons ground flax and 4 tablespoons water
- 1 teaspoon vanilla
Preparation
Mix flax and water in a small bowl and set aside.
Whisk together dry ingredients.
Whisk together wet ingredients in a separate bowl (excluding flax mixture).
Fold the wet ingredients into the dry ingredients and avoid overmixing.
Add the soaked flax mixture and fold it in.
Measure out 1/4 cup of batter onto a hot skillet or griddle and cook.
