Quinoa and Wheat Pancakes with Fresh Berries

Ingredients

  • 1 1/2 cups all pastry wheat flour
  • 1 cup cooked quinoa
  • 3 tablespoons malt powder (or sugar)
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups non-dairy milk
  • 2 tablespoons avocado oil (or coconut)
  • 2 tablespoons ground flax and 4 tablespoons water
  • 1 teaspoon vanilla

Preparation

  1. Mix flax and water in a small bowl and set aside.

  2. Whisk together dry ingredients.

  3. Whisk together wet ingredients in a separate bowl (excluding flax mixture).

  4. Fold the wet ingredients into the dry ingredients and avoid overmixing.

  5. Add the soaked flax mixture and fold it in.

  6. Measure out 1/4 cup of batter onto a hot skillet or griddle and cook.
