Crispy Sourdough Pancakes with Fresh Berries and Syrup
Ingredients
- 1 cup sourdough starter
- 2 cups oatmilk
- 2 cups unbleached flour
- 1/4 cup avocado oil
- 1 tsp vanilla
- 2 tbsp pure maple syrup
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp cinnamon
- 3 tbsp ground flax
- 6 tbsp water
Preparation
Mix together the flax and water. Let sit.
Stir the starter and oatmilk together.
Add in the other flour and oil and mix until mostly smooth.
Mix in the baking soda, baking powder, vanilla, and maple syrup.
Fold in the soaked flax.
Measure out 1/4 cup batter for each pancake and cook.
Top with fresh berries, toasted coconut, and syrup.
This recipe makes roughly 16 four-inch pancakes.
