Creative Cornmeal Pancakes with Almond Butter and Strawberries

Ingredients

  • 1 1/2 cup cornmeal
  • 1 cup almond milk
  • 2 tsp baking powder (activated with splash of apple cider vinegar)
  • 1 tsp baking soda
  • 2 tbsp maple syrup
  • 1 tbsp ground flax

Preparation

  1. Mix all the batter ingredients in a large bowl; it should be thinner than regular pancake batter.

  2. Let the batter sit for 5-10 minutes for the cornmeal to loosen and flax egg to set.

  3. On a large nonstick pan, pour 1/4 cup of batter and cook on each side for 1-2 minutes until bubbles form and underside is brown.

  4. Top with maple syrup, almond butter, vegan butter, or fresh fruit.
