Creative Cornmeal Pancakes with Almond Butter and Strawberries
Ingredients
- 1 1/2 cup cornmeal
- 1 cup almond milk
- 2 tsp baking powder (activated with splash of apple cider vinegar)
- 1 tsp baking soda
- 2 tbsp maple syrup
- 1 tbsp ground flax
Preparation
Mix all the batter ingredients in a large bowl; it should be thinner than regular pancake batter.
Let the batter sit for 5-10 minutes for the cornmeal to loosen and flax egg to set.
On a large nonstick pan, pour 1/4 cup of batter and cook on each side for 1-2 minutes until bubbles form and underside is brown.
Top with maple syrup, almond butter, vegan butter, or fresh fruit.
