Fluffy Vegan Whole Wheat Pancakes
Ingredients
- 1 1/2 cups whole wheat flour
- 3 Tbsp pure maple syrup
- 2 Tbsp baking powder
- 1/2 tsp kosher salt
- 1 1/2 cups oat milk
- 3 Tbsp vegan butter
- 1 tsp vanilla
- 2 Tbsp golden flaxseed
- 4 Tbsp water
Preparation
In a small bowl, whisk the flax and water together. Set aside.
In a large bowl, whisk together the dry ingredients. Set aside.
Melt the vegan butter and whisk together with the oat milk and vanilla.
Pour the liquid mix into the dry and fold to combine.
Before it is completely mixed, fold in the soaked flax.
Fold until no dry clumps remain.
Preheat a non-stick skillet over medium heat.
Measure out 1/4 cup batter onto the hot skillet and cook until bubbles form and edges set, then flip and cook until golden brown. No need to oil the skillet if it is non-stick.
