Vegan Whole Wheat and Oat Pancakes

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup old fashioned oats
  • 3 Tbl brown sugar
  • 2 Tbl baking powder
  • 1 tsp salt
  • 2 Tbl ground flax
  • 1/4 cup water
  • 1 1/4 cup oat milk
  • 3 Tbl avocado oil
  • 1 tsp vanilla extract

Preparation

  1. Combine flax and water. Set aside.

  2. Whisk together flour through salt.

  3. In a separate bowl whisk together the oat milk, oil, and vanilla.

  4. Lightly whisk the soaked flax with the wet ingredients.

  5. Fold the wet mix into the dry until no dry parts remain. Some clumping is okay. Don't over mix.

  6. Spoon out 1/4 cup batter per pancake onto a heated and lightly oiled non-stick griddle or pan. Cook pancake until bubbles form on the top then flip. Entire cooking time per pancake is around 5 minutes.
