Whole Wheat Oat Pancakes
Ingredients
- 1 cup oat milk (or almond milk)
- 1 large egg, beaten
- 1 cup whole wheat flour
- 1/2 cup whole rolled oats
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- Ghee (or unsalted butter)
Preparation
In a large bowl, whisk together the milk and egg
Add remaining ingredients and whisk until just combined
Let batter sit for a few minutes to allow oats to soak in the mixture
Add ghee or butter to a large pan over medium heat
Scoop 1/4 cup batter onto pan, usually doing 3 pancakes at a time to avoid overcrowding
Once the top is bubbly and sides are firm, flip and finish cooking
Serve with pure maple syrup and fruit
