Whole Wheat Oat Pancakes

Ingredients

  • 1 cup oat milk (or almond milk)
  • 1 large egg, beaten
  • 1 cup whole wheat flour
  • 1/2 cup whole rolled oats
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • Ghee (or unsalted butter)

Preparation

  1. In a large bowl, whisk together the milk and egg

  2. Add remaining ingredients and whisk until just combined

  3. Let batter sit for a few minutes to allow oats to soak in the mixture

  4. Add ghee or butter to a large pan over medium heat

  5. Scoop 1/4 cup batter onto pan, usually doing 3 pancakes at a time to avoid overcrowding

  6. Once the top is bubbly and sides are firm, flip and finish cooking

  7. Serve with pure maple syrup and fruit
