Whole Wheat and Oat Pancakes

Ingredients

  • 1 cup whole wheat flour
  • 1 cup oat flour
  • 3 tablespoons pure maple syrup
  • 2 tablespoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1 3/4 cups oat milk or other non-dairy milk
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons avocado oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground golden flaxseed

Preparation

  1. In a 4-cup measuring cup mix the milk, vinegar, and flax and let sit for 5 minutes.

  2. In a large bowl whisk together the dry ingredients.

  3. Whisk the vanilla and oil into the milk mixture.

  4. Pour the liquid mixture into the dry ingredients and fold to combine until no dry clumps remain.

  5. Measure out 1/4 cup of batter onto a hot skillet or use a cookie scoop.

Notes

  1. Oiling the griddle can be skipped if it is non-stick.

  2. This recipe yields approximately 8 medium pancakes or a dozen smaller ones using a cookie scoop.
