Vegan Blueberry ‘Buttermilk’ Chia Pancakes
Ingredients
- 2 cups all-purpose flour
- 2+1/4 cups non-dairy milk
- 2 tbsp apple cider vinegar
- 2 tbsp chia seeds
- 1 tbsp sugar of choice
- 1 tsp baking powder
- a pinch of salt
- 1/2 cup blueberries
Preparation
In a large mixing bowl, stir together milk, apple cider vinegar, chia seeds and let sit for 5 minutes
Sift together flour, baking powder, sugar, salt and add to the wet mixture
Mix until combine and fold in blueberries
Pan fry pancakes on a greased frying pan over medium heat until lightly browned on each side
