Vegan Blueberry Buttermilk Chia Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 2 1/4 cups non-dairy milk
  • 2 tbsp apple cider vinegar
  • 2 tbsp chia seeds
  • 1 tbsp sugar of choice
  • 1 tsp baking powder
  • A pinch of salt
  • 1/2 cup blueberries

Preparation

  1. In a large mixing bowl, stir together milk, apple cider vinegar, chia seeds and let sit for 5 minutes.

  2. Sift together flour, baking powder, sugar, salt and add to the wet mixture.

  3. Mix until combined and fold in blueberries.

  4. Pan fry pancakes on a greased frying pan over medium heat until lightly browned on each side.
