Blueberry Lemon Pancakes for a Refreshing Breakfast
Ingredients
- 1/2 cup flour
- 1/4 cup oat milk
- 1 egg
- 1 tbs sugar
- squeeze of lemon juice (~1 tbs) and some zest
- 1 tsp vanilla extract
- 1/2 tbs baking powder
- 1/2 cup blueberries (fresh or frozen)
- pinch of salt
Preparation
Mix all other wet ingredients together in a medium mixing bowl.
Add in dry ingredients and mix well but don't over mix.
Scoop some batter into a nonstick skillet and cook.
Top with a dollop of yogurt, more blueberries, and some extra lemon zest.
