Blueberry Lemon Pancakes for a Refreshing Breakfast

Ingredients

  • 1/2 cup flour
  • 1/4 cup oat milk
  • 1 egg
  • 1 tbs sugar
  • squeeze of lemon juice (~1 tbs) and some zest
  • 1 tsp vanilla extract
  • 1/2 tbs baking powder
  • 1/2 cup blueberries (fresh or frozen)
  • pinch of salt

Preparation

  1. Mix all other wet ingredients together in a medium mixing bowl.

  2. Add in dry ingredients and mix well but don't over mix.

  3. Scoop some batter into a nonstick skillet and cook.

  4. Top with a dollop of yogurt, more blueberries, and some extra lemon zest.
