Apple Cinnamon Pancakes

Ingredients

  • 1 apple
  • 1 egg/1 flax egg
  • 2 tbsp oil or melted butter
  • 130 ml milk of your choice or filtered water
  • 135 g flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar or other sweetener
  • 1 tsp cinnamon
  • honey or maple syrup for the toppings

Preparation

  1. First you'll have to prepare the pancake batter

  2. You can mix everything in a blender or in a big bowl

  3. Add all of the wet ingredients first, blend/stir them well and then add the rest of your dry ingredients, all except for the apple

  4. Stop and stir if you have to until everything is well combined

  5. Then wash and cut your apple in thin slices

  6. Heat a non-stick pan, put a tiny bit of oil or melted butter on the bottom of the pan, and put an apple slice on top of it

  7. Then using a spoon pour the batter on top of the slice to form pancakes

  8. Bake each side for 1 minute or less until they turn golden-brown

  9. After making the stack of pancakes, add the honey or maple syrup and enjoy ? it makes around 5 big pancakes ?
