Banana Bread Pancakes with Chocolate, Almond Butter, and Blueberries

Ingredients

  • 1 ripe banana
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder

Garnishes

  • blueberries
  • almond butter
  • dark chocolate blocks

Preparation

  1. Mash the banana with a fork.

  2. Beat the egg and mix all of the ingredients except for the garnishes to prepare the pancake batter.

  3. Heat a non-stick pan and optionally add a small amount of coconut oil if desired.

  4. Pour the batter using a spoon to form small pancakes.

  5. Cook each side for 1 minute until golden-brown.

  6. Stack the pancakes after cooking.

  7. Add blueberries and chocolate blocks to the stack.

  8. Drizzle almond butter over the pancakes.
