Banana Bread Pancakes with Chocolate, Almond Butter, and Blueberries
Ingredients
- 1 ripe banana
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
Garnishes
- blueberries
- almond butter
- dark chocolate blocks
Preparation
Mash the banana with a fork.
Beat the egg and mix all of the ingredients except for the garnishes to prepare the pancake batter.
Heat a non-stick pan and optionally add a small amount of coconut oil if desired.
Pour the batter using a spoon to form small pancakes.
Cook each side for 1 minute until golden-brown.
Stack the pancakes after cooking.
Add blueberries and chocolate blocks to the stack.
Drizzle almond butter over the pancakes.
