Mini Banana Bread Pancakes with Toppings

Ingredients

  • 1 ripe banana
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder
  • blue spirulina powder (optional)

Garnishes

  • blueberries
  • nut butter
  • yoghurt

Preparation

  1. Mash the banana with a fork.

  2. Beat the egg and mix all of the ingredients except for the garnishes.

  3. Heat a non-stick pan and using a teaspoon pour the batter to form mini pancakes (you can add a tiny amount of coconut oil if desired).

  4. Cook each side until they turn golden-brown.

  5. For blue pancakes, add a tiny amount of blue spirulina powder to a portion of the batter in another bowl and cook similarly.

  6. After making the mini pancakes, add the blueberries and yoghurt.

  7. Drizzle some nut butter over everything.

Tips

  1. This is a quick and easy breakfast that's delicious and healthy.

  2. Use a flax egg for a vegan version if preferred.
