Mini Banana Bread Pancakes with Toppings
Ingredients
- 1 ripe banana
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
- blue spirulina powder (optional)
Garnishes
- blueberries
- nut butter
- yoghurt
Preparation
Mash the banana with a fork.
Beat the egg and mix all of the ingredients except for the garnishes.
Heat a non-stick pan and using a teaspoon pour the batter to form mini pancakes (you can add a tiny amount of coconut oil if desired).
Cook each side until they turn golden-brown.
For blue pancakes, add a tiny amount of blue spirulina powder to a portion of the batter in another bowl and cook similarly.
After making the mini pancakes, add the blueberries and yoghurt.
Drizzle some nut butter over everything.
Tips
This is a quick and easy breakfast that's delicious and healthy.
Use a flax egg for a vegan version if preferred.
