Banana Bread Pancakes with Chocolate and Blueberries
Ingredients
- 1 ripe banana
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
Garnishes
- blueberries
- almond butter
- some dark chocolate blocks
Preparation
Mash the banana with a fork and beat the egg.
Mix all of the ingredients except for the garnishes to prepare the pancake batter.
Heat a non-stick pan and pour the batter with a spoon to form small pancakes; add a tiny amount of coconut oil if desired.
Cook each side for 1 minute until golden-brown.
Stack the pancakes and add the blueberries and chocolate blocks.
Drizzle almond butter over the pancakes and serve.
