Banana Bread Pancakes with Chocolate and Blueberries

Ingredients

  • 1 ripe banana
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder

Garnishes

  • blueberries
  • almond butter
  • some dark chocolate blocks

Preparation

  1. Mash the banana with a fork and beat the egg.

  2. Mix all of the ingredients except for the garnishes to prepare the pancake batter.

  3. Heat a non-stick pan and pour the batter with a spoon to form small pancakes; add a tiny amount of coconut oil if desired.

  4. Cook each side for 1 minute until golden-brown.

  5. Stack the pancakes and add the blueberries and chocolate blocks.

  6. Drizzle almond butter over the pancakes and serve.
