Simple Courgette Pancake Fritters

Ingredients

  • 1 medium courgette, grated
  • 1 large egg
  • 1/2 tsp baking powder
  • 3 tbsp flour
  • 1/2 tsp paprika
  • Salt and pepper to taste

Preparation

  1. In a large bowl, mix together the beaten egg, baking powder, flour, paprika and pinch of salt.

  2. Squeeze the excess water out of the grated courgette and add to the mixture.

  3. Ensure a thick pancake-like consistency forms.

  4. Heat oil in a pan over a medium heat.

  5. Scoop large tablespoons of the batter into the pan, flattening into pancake shape.

  6. Cook for approximately 6 minutes, flipping halfway, or until golden on the outside.

  7. Serve with wilted spinach, tomatoes, a poached egg, or avocado.
