Simple Courgette Pancake Fritters
Ingredients
- 1 medium courgette, grated
- 1 large egg
- 1/2 tsp baking powder
- 3 tbsp flour
- 1/2 tsp paprika
- Salt and pepper to taste
Preparation
In a large bowl, mix together the beaten egg, baking powder, flour, paprika and pinch of salt.
Squeeze the excess water out of the grated courgette and add to the mixture.
Ensure a thick pancake-like consistency forms.
Heat oil in a pan over a medium heat.
Scoop large tablespoons of the batter into the pan, flattening into pancake shape.
Cook for approximately 6 minutes, flipping halfway, or until golden on the outside.
Serve with wilted spinach, tomatoes, a poached egg, or avocado.
