Multi-Grain Pancakes with Fresh Berries

Ingredients

  • 1 cup all purpose flour
  • 3/4 cup @bobsredmill 10 grain cereal
  • 1/4 cup rye flour (or more AP)
  • 3 Tbl malt powder (or sugar)
  • 2 Tbl baking powder
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1 1/2 cup non-dairy milk
  • 2 Tbl avocado oil (or coconut)
  • 2 Tbl ground flax + 4 Tbl water
  • 1 tsp vanilla

Preparation

  1. Mix flax and water in a small bowl and set aside.

  2. Whisk together the dry ingredients.

  3. Whisk together the wet ingredients in a separate bowl, excluding the flax mixture.

  4. Fold the wet ingredients into the dry ingredients and avoid overmixing.

  5. Add the soaked flax mixture and fold it in.

  6. Measure out 1/4 cup of batter onto a hot skillet or griddle and cook.

  7. Flip the pancake when bubbles form on the surface and cook until golden brown.
