Multi-Grain Pancakes with Fresh Berries
Ingredients
- 1 cup all purpose flour
- 3/4 cup @bobsredmill 10 grain cereal
- 1/4 cup rye flour (or more AP)
- 3 Tbl malt powder (or sugar)
- 2 Tbl baking powder
- 1 tsp salt
- 1/2 tsp cinnamon
- 1 1/2 cup non-dairy milk
- 2 Tbl avocado oil (or coconut)
- 2 Tbl ground flax + 4 Tbl water
- 1 tsp vanilla
Preparation
Mix flax and water in a small bowl and set aside.
Whisk together the dry ingredients.
Whisk together the wet ingredients in a separate bowl, excluding the flax mixture.
Fold the wet ingredients into the dry ingredients and avoid overmixing.
Add the soaked flax mixture and fold it in.
Measure out 1/4 cup of batter onto a hot skillet or griddle and cook.
Flip the pancake when bubbles form on the surface and cook until golden brown.
