Corn and Wheat Pancakes

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup coarse corn meal
  • 3 Tbl pure maple syrup
  • 2 Tbl baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp cinnamon
  • 1 1/2 cups oat milk
  • 1 Tbl apple cider vinegar
  • 3 Tbl avocado oil
  • 1 tsp vanilla
  • 2 Tbl golden flax
  • 4 Tbl water

Preparation

  1. In a small bowl whisk the flax and water together and set aside.

  2. In a measuring cup mix the milk and vinegar and let sit for 5 minutes.

  3. In a large bowl whisk together the dry ingredients.

  4. Whisk the vanilla and oil into the milk.

  5. Pour the liquid mixture into the dry ingredients and fold to combine.

  6. Before it is completely mixed, fold in the soaked flax.

  7. Fold until no dry clumps remain.

  8. Measure out 1/4 cup of batter onto a hot skillet.

  9. Skip oiling the skillet as long as it is non-stick.

Notes

  1. This recipe makes roughly 8 medium pancakes.
