Fluffy Vegan Lemon Pancakes

Ingredients

  • 2.5 dl flour
  • 2 dl oat milk
  • 1 tsp baking powder
  • 1 tsp vanilla powder
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tbsp agave syrup

Preparation

  1. Mix all the dry ingredients in a bowl.

  2. Add the liquids and stir until you have a smooth batter.

  3. Add some coconut oil to your pan and fry your pancakes.

  4. Use about 3 tablespoons of batter per pancake to make approximately 7 pancakes.

Tips

  1. Top the pancakes with fresh strawberries and agave syrup for a delicious finish.

  2. Adding lemon juice to the batter instead of on top provides a fresher flavor.
