Blue Ombre Pancake Stack with Avocado Cream
Ingredients
Pancakes
- 1 banana
- 200 g spelt flour
- 250 ml oat milk
- 2 tsp baking powder
- 3 tsp blue spirulina powder
Chocolate cream
- 1 avocado
- 2 tbsp cacao powder
- 1 tbsp agave syrup
Preparation
Mash the banana in a bowl until smooth.
Add spelt flour, baking powder, and blue spirulina powder to the mashed banana; mix well to combine dry ingredients.
Gradually pour in oat milk and stir until a smooth batter forms.
Heat a non-stick skillet over medium heat.
Pour batter onto the skillet to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown on both sides.
For the chocolate cream, mash the avocado in a separate bowl until creamy.
Stir in cacao powder and agave syrup until fully incorporated and smooth.
Stack the cooked pancakes, spreading chocolate cream between layers and on top to create the ombre effect.
