Banana Pancakes with Three Colors

Ingredients

  • 1 large ripe banana
  • 1/2 cup spelt flour
  • 1/2 cup almond flour
  • Pinch of salt
  • 1 tbsp apple cider vinegar
  • 1 cup oat milk
  • 1 tsp baking powder
  • 2 tbsp maple syrup (optional)
  • 1 tsp oil for brushing skillet

Coloring agents

  • Beetroot juice
  • Cacao powder
  • Hempseed protein powder

Optional toppings

  • Maple syrup
  • Coconut yogurt
  • Banana slices
  • Berries

Preparation

  1. Mix all ingredients together until smooth, adding more flour or milk if needed to adjust consistency.

  2. Divide the dough into three parts and color each with beetroot juice, hempseed protein powder, and cacao powder.

  3. Heat the oil in a pan and add 1-2 tablespoons of dough per pancake.

  4. Cook on both sides until light brown.

  5. Top with favorite toppings and enjoy.
