Cinnamon Banana Pancakes with Fruits
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
- 1 tablespoon cinnamon
- figs, grapes or other fruits
- honey or other drizzle
Preparation
Mash the banana with a fork, beat the egg, and mix all ingredients except the fruits to prepare the pancake batter.
Heat a non-stick pan and pour the batter using a spoon to form small pancakes; optionally add a small amount of coconut oil.
Cook each side for 1 minute until done.
Stack the pancakes, add fruits and honey on top, and serve.
