Cinnamon Banana Pancakes with Fruits

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder
  • 1 tablespoon cinnamon
  • figs, grapes or other fruits
  • honey or other drizzle

Preparation

  1. Mash the banana with a fork, beat the egg, and mix all ingredients except the fruits to prepare the pancake batter.

  2. Heat a non-stick pan and pour the batter using a spoon to form small pancakes; optionally add a small amount of coconut oil.

  3. Cook each side for 1 minute until done.

  4. Stack the pancakes, add fruits and honey on top, and serve.
