Banana Bread Pancakes with Chocolate Drizzle
Ingredients
- 1 ripe banana, mashed
- 1 egg or 1 flax egg
- 2 tablespoons whole grain flour
- pinch of salt
- pinch of baking powder (optional)
Garnishes
- peach or nectarine slices
- dark chocolate and a little bit of milk for the drizzle
Preparation
Mash the banana with a fork, beat the egg and mix all of the ingredients except for the garnishes to prepare the pancake batter.
Heat a non-stick pan and pour the batter using a spoon to form little pancakes; you can add a tiny amount of coconut oil if desired.
Cook each side for 1-2 minutes until they turn golden-brown.
Stack the pancakes and add the juicy peach or nectarine slices and the chocolate drizzle.
To make the drizzle, warm a tiny bit of milk in the microwave, add chocolate pieces, stir until smooth, and pour generously over the pancakes.
