Banana Bread Pancakes with Chocolate Drizzle

Ingredients

  • 1 ripe banana, mashed
  • 1 egg or 1 flax egg
  • 2 tablespoons whole grain flour
  • pinch of salt
  • pinch of baking powder (optional)

Garnishes

  • peach or nectarine slices
  • dark chocolate and a little bit of milk for the drizzle

Preparation

  1. Mash the banana with a fork, beat the egg and mix all of the ingredients except for the garnishes to prepare the pancake batter.

  2. Heat a non-stick pan and pour the batter using a spoon to form little pancakes; you can add a tiny amount of coconut oil if desired.

  3. Cook each side for 1-2 minutes until they turn golden-brown.

  4. Stack the pancakes and add the juicy peach or nectarine slices and the chocolate drizzle.

  5. To make the drizzle, warm a tiny bit of milk in the microwave, add chocolate pieces, stir until smooth, and pour generously over the pancakes.
