Banana Bread Pancakes with Bananas and Jam

Ingredients

  • 1 ripe banana, mashed
  • 1 egg or 1 flax egg
  • 3 tablespoons oat flour
  • 1 teaspoon chia seeds
  • pinch of baking powder

Toppings

  • banana slices
  • jam (blueberry suggested)
  • bee pollen
  • chia seeds

Preparation

  1. Mash the banana with a fork, beat the egg, and mix all of the ingredients except for the garnishes to prepare the pancake batter.

  2. Heat a non-stick pan and, if desired, add a tiny amount of coconut oil.

  3. Pour the batter using a spoon to form pancakes.

  4. Cook each side for 1 minute until they turn golden-brown.

  5. After making the stack of pancakes, add the banana slices, the jam, bee pollen, and sprinkle some more chia seeds.
