Banana Bread Pancakes with Bananas and Jam
Ingredients
- 1 ripe banana, mashed
- 1 egg or 1 flax egg
- 3 tablespoons oat flour
- 1 teaspoon chia seeds
- pinch of baking powder
Toppings
- banana slices
- jam (blueberry suggested)
- bee pollen
- chia seeds
Preparation
Mash the banana with a fork, beat the egg, and mix all of the ingredients except for the garnishes to prepare the pancake batter.
Heat a non-stick pan and, if desired, add a tiny amount of coconut oil.
Pour the batter using a spoon to form pancakes.
Cook each side for 1 minute until they turn golden-brown.
After making the stack of pancakes, add the banana slices, the jam, bee pollen, and sprinkle some more chia seeds.
