Banana Bread Pancakes with Bananas and Jam

Ingredients

  • 1 ripe banana, mashed
  • 1 egg or 1 flax egg
  • 2-3 tablespoons oat flour
  • 1 teaspoon chia seeds
  • pinch of baking powder

Toppings

  • banana slices
  • jam (blueberry suggested)
  • bee pollen
  • chia seeds

Preparation

  1. Mash the banana with a fork.

  2. Beat the egg and mix all of the ingredients except for the garnishes.

  3. Heat a non-stick pan and pour the batter using a spoon to form pancakes.

  4. Cook each side for 1 minute until golden-brown. Optionally, add a small amount of coconut oil for frying.

  5. After making the stack of pancakes, add the banana slices, the jam, bee pollen and sprinkle some more chia seeds.
