Vegan Oat Pancakes with Chocolate Cream

Ingredients

  • 80g oat flour
  • 30g coconut flour
  • 1 tsp baking powder
  • 1/2 tsp coconut oil
  • a dash of cinnamon
  • 1/2 mashed banana
  • 1 chia flax egg

Chocolate coconut cream

  • 1/3 cup coconut milk, full fat
  • 1.5 tbsp raw cacao powder
  • 1 tbsp maple syrup

Preparation

  1. In a bowl, mix together the dry ingredients: oat flour, coconut flour, baking powder, and cinnamon

  2. Prepare the wet ingredients by mashing the banana and making the chia flax egg according to standard methods

  3. Combine the wet and dry ingredients to form a batter, adding a little liquid if needed for consistency

  4. Heat a non-stick pan or griddle over medium heat and add a small amount of coconut oil

  5. Pour batter onto the pan to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown

  6. For the chocolate coconut cream, heat the coconut milk, raw cacao powder, and maple syrup in a saucepan over low heat until well mixed

  7. Remove from heat and let the cream cool before serving

  8. Serve the pancakes topped with the chocolate coconut cream
