Vegan Poppy Seed Pancakes with Lemon Sauce
Ingredients
- 400g flour
- 500ml plant-based milk
- 2tb sugar
- 2pck. Vanilla sugar
- 1ts cinnamon
- 2tb Applesauce
- 2tb poppy seeds
- 1tb apple cider vinegar
- 1pck tartar baking powder
- A bit of margarine
- Handful blueberries
Sauce
- 1 cup plant-based yogurt
- 2tb sugar
- Zest of 1/2 lemon
Preparation
Mix sauce ingredients together and place aside
Mix all the dry ingredients in a bowl
Add the wet ingredients
Mix it all together
Heat the margarine in a pan
Bake the pancakes until golden
Serve with maple syrup, cinnamon and sugar, plant-based chocolate chips or fruit
Tips
Favorite toppings include chocolate sauce and banana, applesauce with cinnamon sugar, or poppy seeds with lemony yogurt, preferably topped with a good splash of syrup and blueberries
