Vegan Poppy Seed Pancakes with Lemon Sauce

Ingredients

  • 400g flour
  • 500ml plant-based milk
  • 2tb sugar
  • 2pck. Vanilla sugar
  • 1ts cinnamon
  • 2tb Applesauce
  • 2tb poppy seeds
  • 1tb apple cider vinegar
  • 1pck tartar baking powder
  • A bit of margarine
  • Handful blueberries

Sauce

  • 1 cup plant-based yogurt
  • 2tb sugar
  • Zest of 1/2 lemon

Preparation

  1. Mix sauce ingredients together and place aside

  2. Mix all the dry ingredients in a bowl

  3. Add the wet ingredients

  4. Mix it all together

  5. Heat the margarine in a pan

  6. Bake the pancakes until golden

  7. Serve with maple syrup, cinnamon and sugar, plant-based chocolate chips or fruit

Tips

  1. Favorite toppings include chocolate sauce and banana, applesauce with cinnamon sugar, or poppy seeds with lemony yogurt, preferably topped with a good splash of syrup and blueberries
