Vegan Pancakes with Flax and Maple Syrup
Ingredients
- 1 cup whole wheat flour
- 1/2 cup @bobsredmill oat flour
- 3 Tbl pure maple syrup
- 2 Tbl baking powder
- 1/2 tsp kosher salt
- 1 1/2 cups @theoatyeah
- 3 Tbl melted @earthbalance vegan butter
- 1 tsp vanilla
- 2 Tbl golden flax
- 4 Tbl water
Preparation
In a small bowl whisk the flax and water together. Set aside.
In a large bowl whisk together the dry ingredients. Set aside.
Melt the vegan butter and whisk together with the oat milk and vanilla.
Pour the liquid mix into the dry and fold to combine.
Before it is completely mixed fold in the soaked flax.
Fold until no dry clumps remain.
Measure out 1/4 cup batter onto hot skillet.
I skip oiling the skillet as long as it's non-stick.
Makes roughly 8 medium pancakes.
Serving suggestions
Serve with fresh blueberries, strawberries, peanut butter, and a drizzle of maple syrup.
