Gluten-Free Vegan Chocolate Chip Pancakes

Ingredients

  • 2 cups oat flour
  • 1 1/2 tsp baking powder
  • pinch of salt
  • 1 tbsp apple cider vinegar
  • 1 1/4 cup coconut unsweetened milk
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla
  • non dairy chocolate chips
  • vegan butter

Preparation

  1. Combine apple cider vinegar with milk in a small bowl and set aside.

  2. Combine flour, baking powder, and salt in a large bowl.

  3. Make a well in the middle of dry ingredients and add the milk, maple syrup, vanilla, and mix it up.

  4. Add chocolate chips and mix once more.

  5. Scoop out 1/3 cup of batter and place onto a low medium heat non-stick pan coated with butter.

  6. Flip once the edges have risen and cook till golden brown.

  7. Top with butter and a drizzle of maple syrup.
