Vegan Chocolate Chip Pancakes

Ingredients

  • 2 cups oat flour
  • 1 1/2 tsp baking powder
  • pinch of salt
  • 1 tbsp apple cider vinegar
  • 1 3/4 cup coconut unsweetened milk
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla
  • non dairy chocolate chips
  • sunflower seed butter
  • 2 tbsp coconut sugar
  • 1 cup frozen blueberries

Preparation

  1. Combine acv with milk in a small bowl set aside

  2. Combine flour, baking powder, salt in a large bowl

  3. Make a well in the middle of dry ingredients and add the milk, maple syrup, vanilla and mix it up

  4. Add chocolate chips and mix once more

  5. Scoop out 1/4 cup of batter and place onto a low medium heat non stick pan coated with butter

  6. Flip once the edges have risen and cook till golden brown

  7. Mix in coconut sugar, 3 tbsp water & frozen blueberries in a small pot let it simmer till it thickens and becomes sticky

  8. Pour blueberries onto stack of pancakes with sunflower seed butter!
