Vegan Chocolate Chip Pancakes
Ingredients
- 2 cups oat flour
- 1 1/2 tsp baking powder
- pinch of salt
- 1 tbsp apple cider vinegar
- 1 3/4 cup coconut unsweetened milk
- 2 tbsp maple syrup
- 1/2 tsp vanilla
- non dairy chocolate chips
- sunflower seed butter
- 2 tbsp coconut sugar
- 1 cup frozen blueberries
Preparation
Combine acv with milk in a small bowl set aside
Combine flour, baking powder, salt in a large bowl
Make a well in the middle of dry ingredients and add the milk, maple syrup, vanilla and mix it up
Add chocolate chips and mix once more
Scoop out 1/4 cup of batter and place onto a low medium heat non stick pan coated with butter
Flip once the edges have risen and cook till golden brown
Mix in coconut sugar, 3 tbsp water & frozen blueberries in a small pot let it simmer till it thickens and becomes sticky
Pour blueberries onto stack of pancakes with sunflower seed butter!
