Vegan Gluten-Free Coconut Milk Muffins

Ingredients

  • 1 3/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup canned coconut milk
  • 1/3 cup maple syrup
  • 1/4 cup melted vegan butter

Optional

  • 1 tsp vanilla extract

Preparation

  1. Preheat the oven to 350°F

  2. Mix dry ingredients together.

  3. Add wet ingredients, mix, and pour into 6 muffin liners or silicon cups.

  4. Bake the muffins for 18 minutes.

  5. Brush the tops with melted vegan butter and sprinkle with shredded coconut if desired.
