Vegan Gluten-Free Coconut Milk Muffins
Ingredients
- 1 3/4 cup oat flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1 cup canned coconut milk
- 1/3 cup maple syrup
- 1/4 cup melted vegan butter
Optional
- 1 tsp vanilla extract
Preparation
Mix dry ingredients together, then add wet, mix and pour into 6 muffin liners or silicon cups
Bake muffins in 350 oven for 18 minutes
Brush top with melted vegan butter and sprinkle with shredded coconut if you like
