Vegan Gluten-Free Cinnamon Rolls

Ingredients

  • 1 1/4 cups oat flour
  • 1 cup vanilla Greek yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon apple cider vinegar

Cinnamon sugar mixture

  • 1/4 cup coconut sugar
  • 1 teaspoon cinnamon

Preparation

  1. Mix all of the cinnamon sugar ingredients together and let it chill for 30 minutes.

  2. Mix the cinnamon roll ingredients together to form a dough.

  3. Place parchment paper on a flat surface.

  4. Sprinkle extra oat flour on the surface to prevent sticking.

  5. Roll out the dough to about 1/4 inch thick, using a greased rolling pin, into a rectangle shape.

  6. Sprinkle the cinnamon sugar mixture over the dough, leaving a small border around the edges.

  7. Slice the dough lengthwise into approximately 5 strips.

  8. Roll each strip into a cinnamon roll shape.

  9. Place the rolls in a small greased baking dish.

  10. Preheat the oven to 350°F.

  11. Bake for 20 minutes.

  12. Drizzle with melted coconut butter and sprinkle with additional cinnamon.
