Vegan Gluten-Free Cinnamon Rolls
Ingredients
- 1 1/4 cups oat flour
- 1 cup vanilla Greek yogurt
- 2 tablespoons maple syrup
- 1 teaspoon baking powder
- 1 teaspoon apple cider vinegar
Cinnamon sugar mixture
- 1/4 cup coconut sugar
- 1 teaspoon cinnamon
Preparation
Mix all of the cinnamon sugar ingredients together and let it chill for 30 minutes.
Mix the cinnamon roll ingredients together to form a dough.
Place parchment paper on a flat surface.
Sprinkle extra oat flour on the surface to prevent sticking.
Roll out the dough to about 1/4 inch thick, using a greased rolling pin, into a rectangle shape.
Sprinkle the cinnamon sugar mixture over the dough, leaving a small border around the edges.
Slice the dough lengthwise into approximately 5 strips.
Roll each strip into a cinnamon roll shape.
Place the rolls in a small greased baking dish.
Preheat the oven to 350°F.
Bake for 20 minutes.
Drizzle with melted coconut butter and sprinkle with additional cinnamon.
