Vegan Gluten-Free Coconut Milk Muffins
Ingredients
- 1 3/4 cup oat flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1 cup canned coconut milk
- 1/3 cup maple syrup
- 1/4 cup melted vegan butter
Optional
- 1 tsp vanilla extract
Preparation
Preheat oven to 350°F
Mix dry ingredients together.
Add wet ingredients, mix, and pour into 6 muffin liners or silicon cups.
Bake muffins for 18 minutes.
Brush top with melted vegan butter and sprinkle with shredded coconut if you like.
