Vegan Gluten-Free Blueberry Muffins

Ingredients

  • 1 cup almond milk
  • 1 mashed ripe banana
  • 1/3 cup melted vegan butter
  • 1/4 cup maple syrup
  • 4 tsp stevia in the raw
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1 1/2 cups all purpose flour
  • 1 cup frozen wild blueberries

Preparation

  1. Preheat oven to 400

  2. In a large bowl, mix together banana, almond milk, maple syrup, butter, stevia, baking soda, and baking powder.

  3. Mix in flour until just combined. Don't over mix! Fold in the blueberries gently. Pour the batter into 12 lined muffin cups. I like to spray the liners with baking spray to make sure they don't stick!

  4. Bake for 20-25 minutes.
