Vegan Gluten-Free Sprinkle Cupcakes

Ingredients

  • 1 cup almond milk
  • 1/2 cup melted vegan butter
  • 1 cup sugar
  • 2 tsp baking powder
  • 2 tsp vanilla
  • 1 tsp baking soda
  • 2 cups all purpose flour or gluten free all purpose flour
  • 1/4 cup sprinkles

Optional icing

  • 2 cups powdered sugar
  • 4 tbsp softened vegan butter
  • 1/2 tsp vanilla
  • 1 tbsp almond milk

Preparation

  1. Preheat oven to 375

  2. In a large mixing bowl, mix the almond milk, butter, sugar, baking powder, baking soda, and vanilla. Then, mix in the flour just until combined. Be careful not to over mix.

  3. Finally, mix in the sprinkles and pour the batter into 12-14 cupcake molds. Bake for 25-30 minutes until the cupcakes have risen and are lightly golden on top.

  4. Mix together the icing ingredients and frost the cupcakes if desired.
