Moist Chocolate Zucchini Muffins with Protein

Ingredients

  • 1 cup almond flour
  • 1/3 cup chocolate protein powder
  • 1/3 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 egg
  • 1/2 cup almond milk
  • 2 tbsp coconut oil
  • 1 cup shredded zucchini
  • 1 ripe banana
  • 1 tsp vanilla
  • 2 tsp baking powder
  • 1/2 cup chocolate chips

Preparation

  1. Squeeze out excess water from the shredded zucchini.

  2. Melt the coconut oil.

  3. Combine all ingredients and mix well.

  4. Bake at 350 degrees Fahrenheit for 22-25 minutes.
