Double Chocolate Zucchini Muffins

Ingredients

  • 2 eggs
  • 1/2 cup almond flour
  • 3 tbsp coconut flour
  • 1/4 cup maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla
  • 1 1/2 tbsp melted butter
  • 2 tbsp cocoa powder
  • 1/2 cup shredded zucchini (pat dry)
  • 1/2 cup chocolate chip (use a paleo or gluten free brand if you follow either of those diets! I used @lilys_sweets)

Preparation

  1. Preheat oven to 350F

  2. In a bowl, whisk the eggs

  3. Then add in the rest of the muffin ingredients besides the chocolate chips

  4. Mix together well

  5. Then fold in the chocolate chips

  6. Line 6 muffin cups

  7. Pour batter 3/4 of the way in the cups

  8. Bake at 350F for 25 minutes

  9. Remove and top with more chocolate chips if you want!

  10. Let muffins cool completely
