Double Chocolate Zucchini Muffins
Ingredients
- 2 eggs
- 1/2 cup almond flour
- 3 tbsp coconut flour
- 1/4 cup maple syrup
- 1/2 tsp baking powder
- 1/2 tsp vanilla
- 1 1/2 tbsp melted butter
- 2 tbsp cocoa powder
- 1/2 cup shredded zucchini (pat dry)
- 1/2 cup chocolate chip (use a paleo or gluten free brand if you follow either of those diets! I used @lilys_sweets)
Preparation
Preheat oven to 350F
In a bowl, whisk the eggs
Then add in the rest of the muffin ingredients besides the chocolate chips
Mix together well
Then fold in the chocolate chips
Line 6 muffin cups
Pour batter 3/4 of the way in the cups
Bake at 350F for 25 minutes
Remove and top with more chocolate chips if you want!
Let muffins cool completely
