Sweet Potato Zucchini Muffins
Ingredients
- 3 eggs
- 2/3 cup cooked and peeled sweet potato
- 1/3 cup + 1 tbsp coconut flour
- 1/4 cup maple syrup
- 1/3 cup finely shredded zucchini (pat dry)
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp vanilla or 1 tbsp vanilla collagen
- 2 tbsp applesauce (or 2 tbsp coconut oil)
- 1 tbsp coconut oil
- 1/2 cup chocolate chips (optional)
Preparation
Preheat oven to 350°F
In a bowl, whisk the eggs.
Add in sweet potato and mash it.
Add in everything else besides the chocolate chips and mix well.
Fold in the chocolate chips.
Line a muffin tin with muffin liners.
Fill about 3/4 of the way.
Bake at 350°F for 38-40 minutes.
Let cool completely.
You can place them in the fridge to harden them up too.
