Sweet Potato Zucchini Muffins

Ingredients

  • 3 eggs
  • 2/3 cup cooked and peeled sweet potato
  • 1/3 cup + 1 tbsp coconut flour
  • 1/4 cup maple syrup
  • 1/3 cup finely shredded zucchini (pat dry)
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla or 1 tbsp vanilla collagen
  • 2 tbsp applesauce (or 2 tbsp coconut oil)
  • 1 tbsp coconut oil
  • 1/2 cup chocolate chips (optional)

Preparation

  1. Preheat oven to 350°F

  2. In a bowl, whisk the eggs.

  3. Add in sweet potato and mash it.

  4. Add in everything else besides the chocolate chips and mix well.

  5. Fold in the chocolate chips.

  6. Line a muffin tin with muffin liners.

  7. Fill about 3/4 of the way.

  8. Bake at 350°F for 38-40 minutes.

  9. Let cool completely.

  10. You can place them in the fridge to harden them up too.
