Sweet Potato Zucchini Muffins

Ingredients

  • 3 eggs
  • 2/3 cup cooked and peeled sweet potato
  • 1/3 cup + 1 tbsp coconut flour
  • 1/4 cup maple syrup
  • 1/3 cup finely shredded zucchini
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla or 1 tbsp vanilla collagen
  • 2 tbsp applesauce or 2 tbsp coconut oil
  • 1 tbsp coconut oil
  • 1/2 cup chocolate chips (optional)

Preparation

  1. In a bowl, whisk the eggs.

  2. Then add in sweet potato and mash it.

  3. Add in everything else besides the chocolate chips and mix well.

  4. Then fold in the chocolate chips.

  5. Line a muffin tin with muffin liners.

  6. Makes 9 muffins and fill about 3/4 of the way.

  7. Bake at 350F for 38-40 minutes.

  8. Let cool completely.

  9. You can place them in the fridge to harden them up too.
