Zucchini Banana Bread Waffles

Ingredients

  • 2 eggs
  • 2 ripe bananas
  • 1/4 cup + 1 tbsp coconut flour
  • 1/4 cup shredded zucchini (pat dry and get as much water out as you can)
  • 3 tbsp nut butter
  • 1.5 tbsp maple syrup
  • 1.5 tbsp melted ghee or butter
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp vanilla

Preparation

  1. Whisk the eggs then add in the rest of the ingredients

  2. Mix together well

  3. Grease a mini waffle iron and add the batter in

  4. It gets big at first put just press your waffle iron down once or twice to flatten it out

  5. Cooked for 4-5 minutes in my mini waffle iron! haven’t tested in a regular waffle iron but i would make mini ones in it! topped with maple syrup + @organicvalley butter! #paleo #glutenfree #waffles #choosingbalance #heathyrecipes #nationalwaffleday
