Homemade Blueberry Donuts with Yogurt Icing
Ingredients
- 1 cup almond flour
- 1 tbsp coconut flour
- 2 eggs
- 3 tbsp maple syrup
- 1 tsp vanilla
- 1 tsp baking powder
- 1/3 cup blueberries
Icing
- 1/2 cup blueberries
- 1 cup plain Greek yogurt
Preparation
In a bowl, whisk the eggs. Then add in everything else except the blueberries. Mix well.
Then fold in the blueberries.
Grease a donut pan well.
Add the batter about 3/4 of the way.
Bake at 350F for 14-15 minutes.
Let cool completely before removing from pan to add icing.
For the icing, blend 1/2 cup blueberries and 1 cup plain Greek yogurt in a high speed blender or food processor.
You can ice the donuts right away or save the icing in an airtight container in the fridge and ice as you eat them.
Store the donuts in the fridge.
