Mini Lemon Poppyseed Muffins

Ingredients

  • 2 eggs
  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 cup maple syrup
  • 1/2 tsp baking powder
  • 3 tsp lemon zest
  • 1/2-1 tbsp poppyseeds
  • 1 tbsp softened ghee

Preparation

  1. Preheat oven to 350F

  2. Whisk the eggs

  3. Add in everything except the poppyseeds

  4. Mix well

  5. Add in the poppyseeds

  6. Line a mini muffin tin

  7. Bake at 350F for 15 minutes

  8. Let cool then top with melted coconut butter

Notes

  1. Makes about 12-14 mini muffins or about 6 regular muffins

  2. Poppyseed amount can be adjusted based on preference, between 1/2 and 1 tablespoon
