Mini Lemon Poppyseed Muffins
Ingredients
- 2 eggs
- 1/2 cup almond flour
- 2 tbsp coconut flour
- 1/4 cup maple syrup
- 1/2 tsp baking powder
- 3 tsp lemon zest
- 1/2-1 tbsp poppyseeds
- 1 tbsp softened ghee
Preparation
Preheat oven to 350F
Whisk the eggs
Add in everything except the poppyseeds
Mix well
Add in the poppyseeds
Line a mini muffin tin
Bake at 350F for 15 minutes
Let cool then top with melted coconut butter
Notes
Makes about 12-14 mini muffins or about 6 regular muffins
Poppyseed amount can be adjusted based on preference, between 1/2 and 1 tablespoon
