Cinnamon Mug Cakes

Ingredients

  • 1 egg
  • 2 tbsp coconut flour
  • 1/2- 1 tbsp coconut sugar (initially I had 1/2 but it wasn’t that sweet so if you want it sweeter
  • add 1
  • 2 tbsp almond milk
  • 1/2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tbsp coconut oil
  • 1/2 tbsp coconut butter
  • 1/2 tbsp almond butter
  • 1/2 tsp coconut sugar

Preparation

  1. In a bowl, whisk 1 egg then add in 2 tbsp coconut flour, 1/2- 1 tbsp coconut sugar (initially I had 1/2 but it wasn’t that sweet so if you want it sweeter, add 1

  2. If that’s too much for you cut it back!), 2 tbsp almond milk, 1/2 tsp vanilla, 1 tsp cinnamon, 1/2 tsp baking powder, 1/2 tbsp coconut oil melted

  3. Mix together and add to a little ramekin and microwave for 2 minutes

  4. Topped with an easy 3 ingredient icing recipe: 1/2 tbsp coconut butter, 1/2 tbsp almond butter, 1/2 tsp coconut sugar all mixed together and microwaved 10 seconds to make it a little thinner to add it on top
