Vegan Gluten-Free Cinnamon Loaf with Icing
Ingredients
- 2 1/2 cup regular all purpose flour or gluten free all purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 cup maple syrup
- 2 tsp vanilla extract
- 1/2 cup melted vegan butter
- 1 cup almond milk
- 2-3 tsp cinnamon
Frosting
- 1 1/2 cups confectioners sugar
- 1/4 cup softened vegan butter
- 4 ounces of vegan cream cheese
Preparation
Preheat your oven to 350.
In a large bowl, mix baking soda, baking powder, maple syrup, melted butter, vanilla, and almond milk.
Then, mix in flour until there are no lumps.
Pour half the batter into a greased loaf pan and sprinkle 1-2 tsp cinnamon in.
Use a knife or toothpick to swirl 3-4 times.
Then, pour the remaining batter into the loaf pan and repeat the cinnamon swirl.
Bake for 45-50 minutes until the loaf is golden.
Serve with vegan cream cheese frosting on top.
Frosting
Mix the frosting ingredients with an electric mixer.
