Vegan Gluten-Free Cinnamon Loaf with Icing

Ingredients

  • 2 1/2 cup regular all purpose flour or gluten free all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup maple syrup
  • 2 tsp vanilla extract
  • 1/2 cup melted vegan butter
  • 1 cup almond milk
  • 2-3 tsp cinnamon

Frosting

  • 1 1/2 cups confectioners sugar
  • 1/4 cup softened vegan butter
  • 4 ounces of vegan cream cheese

Preparation

  1. Preheat your oven to 350.

  2. In a large bowl, mix baking soda, baking powder, maple syrup, melted butter, vanilla, and almond milk.

  3. Then, mix in flour until there are no lumps.

  4. Pour half the batter into a greased loaf pan and sprinkle 1-2 tsp cinnamon in.

  5. Use a knife or toothpick to swirl 3-4 times.

  6. Then, pour the remaining batter into the loaf pan and repeat the cinnamon swirl.

  7. Bake for 45-50 minutes until the loaf is golden.

  8. Serve with vegan cream cheese frosting on top.

Frosting

  1. Mix the frosting ingredients with an electric mixer.
