Vegan Carrot Oat Breakfast Cake
Ingredients
- 2/3 cup oats
- 1 carrot
- 1/2 cup almond milk
- 1/2 tsp vanilla extract
- squeeze of lemon
- 2 tbsp sweetener
- pinch of cinnamon
- pinch of ginger
- pinch of allspice
- 1/2 tbsp flaxseed
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- handful of raisins
- handful of coconut chips
Frosting
- vegan cream cheese
- dash of maple syrup
Preparation
Preheat the oven to 180°C fan
Grate the carrot
Blend the oats to a flour consistency
Mix all the cake ingredients together and pour most into an oven-proof dish, leaving a few tablespoons aside.
Mix the vegan cream cheese and a dash of maple syrup together.
Spoon the mixture into the centre of the oats and cover with the remaining oat mixture.
Bake for 25-30 minutes.
