Vegan Carrot Oat Breakfast Cake

Ingredients

  • 2/3 cup oats
  • 1 carrot
  • 1/2 cup almond milk
  • 1/2 tsp vanilla extract
  • squeeze of lemon
  • 2 tbsp sweetener
  • pinch of cinnamon
  • pinch of ginger
  • pinch of allspice
  • 1/2 tbsp flaxseed
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • handful of raisins
  • handful of coconut chips

Frosting

  • vegan cream cheese
  • dash of maple syrup

Preparation

  1. Preheat the oven to 180°C fan

  2. Grate the carrot

  3. Blend the oats to a flour consistency

  4. Mix all the cake ingredients together and pour most into an oven-proof dish, leaving a few tablespoons aside.

  5. Mix the vegan cream cheese and a dash of maple syrup together.

  6. Spoon the mixture into the centre of the oats and cover with the remaining oat mixture.

  7. Bake for 25-30 minutes.
