Magnificent Mango Fruit Cake

Ingredients

  • 1.5 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup coconut oil (or any veg oil)
  • 3/4 cup fresh mango pulp
  • 1/4 cup cane sugar
  • 1/4 cup almond milk
  • 1 tsp vanilla extract

Preparation

  1. Peel and chop the mangoes to make a puree.

  2. Blend until it is smooth.

  3. Use a sieve to remove fibers.

  4. Preheat oven to 180°C.

  5. Sift the dry ingredients before mixing them in a bowl.

  6. Use a separate bowl to whisk the wet ingredients and add fresh mango pulp, mixing until combined.

  7. Add the dry mixture to the wet one in 3 batches, adding each batch when the batter is still floury.

  8. Fold the mixture to get a lump-free batter, but do not overmix.

  9. Pour the batter into a greased loaf pan.

  10. Use a spatula to level the top.

  11. Release air bubbles by gently tapping the pan onto the countertop.

  12. Place it in the oven.

  13. Bake for 45-55 minutes and use a toothpick to check if it’s ready.

  14. Slice and serve at breakfast or tea.
