Cheat Day Vegan Chocolate Cake
Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup cacao powder
- 1/2 tsp sea salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup hot coffee
- 1 cup almond milk
- 1/2 cup coconut or vanilla yogurt
- 1/2 cup coconut oil
- 1 1/4 cups cane sugar
- 1 tsp vanilla extract
Preparation
Preheat oven to 350ºF. Grease your bundt cake pan and set aside.
Sift the dry ingredients in a large mixing bowl.
Whisk the wet ingredients in a separate bowl. Then pour batter into the larger bowl.
Mix with a spatula or stand mixer until you reach a rich glossy batter. (Don’t mind a few lumps!)
Pour batter into the pan.
Pop it in the oven to bake. (45-55 min)
Rotate the pan after 20-25 mins to distribute heat.
Let the cake cool on a wire rack.
Invert it onto a plate after 1 hr.
Serve it after it reaches room temperature.
Tips
Glaze it with melted dark chocolate for an extra dose of sweetness.
