Cheat Day Vegan Chocolate Cake

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup cacao powder
  • 1/2 tsp sea salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup hot coffee
  • 1 cup almond milk
  • 1/2 cup coconut or vanilla yogurt
  • 1/2 cup coconut oil
  • 1 1/4 cups cane sugar
  • 1 tsp vanilla extract

Preparation

  1. Preheat oven to 350ºF. Grease your bundt cake pan and set aside.

  2. Sift the dry ingredients in a large mixing bowl.

  3. Whisk the wet ingredients in a separate bowl. Then pour batter into the larger bowl.

  4. Mix with a spatula or stand mixer until you reach a rich glossy batter. (Don’t mind a few lumps!)

  5. Pour batter into the pan.

  6. Pop it in the oven to bake. (45-55 min)

  7. Rotate the pan after 20-25 mins to distribute heat.

  8. Let the cake cool on a wire rack.

  9. Invert it onto a plate after 1 hr.

  10. Serve it after it reaches room temperature.

Tips

  1. Glaze it with melted dark chocolate for an extra dose of sweetness.
