Vegan Chocolate Chip Loaded Cake

Ingredients

Wet

  • 1 cup almond milk
  • 1 TBS applesauce
  • 1 tsp apple cider vinegar
  • 1/3 cup maple syrup
  • 1/4 cup vegetable oil or canola oil
  • 1 tsp vanilla extract
  • a few drops of almond extract

Dry

  • 2 cups plain flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegan chocolate chips

Preparation

  1. Line a 9x5 inch loaf pan with parchment paper. Preheat oven to 180°C.

  2. Place wet ingredients into a bowl and stir to combine.

  3. In another bowl, add flour, baking powder, baking soda, and salt, and whisk to combine.

  4. Fold dry ingredients into wet until just combined.

  5. Add chocolate chips and mix in.

  6. Pour the batter into the pan. Then sprinkle some more chocolate chips on top.

  7. Bake for 35-40 minutes and use a toothpick to check if cooked.

  8. Let it cool completely before slicing.
