Carrot Cake Oat Cookies
Ingredients
- 1.5 cups porridge oats
- 2 medium-sized ripe bananas, mashed
- 1/2 cup grated carrots
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1 tsp vanilla extract
- 1/2 cup peanut butter
- 1/4 cup coconut sugar
- 1/2 tbsp. maple syrup
- 1.5 tsp cinnamon
- 1 tsp baking soda
- pinch of salt
Preparation
Preheat the oven to 180degrees c ?
In a large bowl, mix together the mashed bananas , maple syrup, peanut butter, vanilla extract and grated carrots
In a separate bowl, mix together the oats, coconut sugar, cinnamon, salt and baking soda
Combine the mixtures in both bowls and then fold in the raisins and walnuts
Scoop up a small handful of the mixture and roll it into a ball in your hands
Place on a lined and greased baking tray and press the mixture down into a cookie shape using the back of a spoon
Repeat with the rest of the mixture, leaving space between each cookie
Bake in the oven for approximately 15 minutes, or until firm on top and starting to go golden
