Gf V Oatmeal Breakfast Cookies

Ingredients

  • 1/3 c vegan butter
  • 1/4 c cashew milk
  • 1/4 c cashew butter
  • 1/2 c coconut sugar
  • 1 tbsp madagascar vanilla
  • 3/4 c cassava flour
  • 1 c almond four
  • 1 c gf rolled oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 c toasted walnuts, chopped
  • 1/2 c chocolate chips, plus more for topping

Preparation

  1. Preheat oven to 350

  2. Combine first 6 ingredients in a large bowl using a hand mixer! Beat until creamy

  3. Add in all dry ingredients (except walnuts and choc chips) and mix just until well combined

  4. Fold in walnuts and chocolate chips

  5. Roll 1.5 tbsp sized balls and flatten slightly on parchment lined baking sheet. Top each cookie with extra choco chips for extra cuteness

  6. Bake for 8-10 minutes

  7. Serve warm with a glass of chilled cashew milk
